What does it mean when an enzyme is optimised?

Optimizing means allowing the enzyme to work to its full capacity. Enzymes catalyze chemical reactions, meaning they allow them to react faster and more efficiently. Because enzymes are proteins, they are greatly affected by pH (which is why we have stomach acids to break down proteins from our food) and temperature (they will move faster if you increase the temperature).
